How to Brew Phoenix Dancong Tea

Phoenix Dancong is one of the most aromatic oolong teas in China, and it is also one of the easiest to ruin. The leaves are long, twisted and tightly rolled, packed with aromatic compounds that release in seconds — not minutes. Brew it the way you brew a black tea and you get a bitter, flat cup that tastes nothing like the tea it could be.

The method below is the one used in Chaozhou households and tea houses, adapted so you can follow it in an ordinary kitchen. It takes about twenty seconds of active work per infusion.

Why Dancong Is Brewed Differently

Almost everything about Dancong’s brewing method follows from two facts. First, it is a high-aroma tea: the scent compounds are volatile, and they come off the leaf fast. Second, the leaf is thick and slow to open, so it keeps giving for many infusions if you do not exhaust it early.

That combination points to near-boiling water and very short steeps. Cool water extracts too slowly and leaves the aroma behind; long steeps pull out the tannins and bury it. Hot and fast is the whole idea.

Oolong sits between green and black tea in the way it is processed — partly oxidised, then roasted — and that middle position is exactly why the brewing window is narrow. You can read a general introduction to the category from the UK Tea & Infusions Association.

What You Need

• A gaiwan of 110–130 ml, or a small clay or porcelain pot of similar size. A large Western teapot makes the leaf-to-water ratio impossible to control.
• Water at 95–100 °C. Pour it as soon as the kettle stops rolling, or let it sit thirty seconds if your kettle runs very hot.
• About 7 g of leaf per 120 ml, roughly one gram to every 17 ml of water.
• A fairness pitcher (gong dao bei) and two or three cups of 30–50 ml. Small cups cool quickly, which is the point
• A kettle you can pour steadily from a low height without splashing the leaf.

Step by Step: Gongfu Brewing at Home

1. Warm everything first. Fill the gaiwan, the pitcher and the cups with hot water and let them stand while you measure the tea. A cold vessel costs you most of the first infusion’s aroma.
2. Add the leaf. Seven grams in a 120 ml gaiwan. If you weigh nothing else, weigh the tea — volume is unreliable with twisted leaf.
3. Rinse. Pour water over the leaf, then immediately pour it out, two or three seconds in total, straight into the cups to warm them or into the sink. The rinse wakes the leaf and washes off surface dust. Drink it or discard it; tradition splits on this and the tea does not care.
4. Smell the empty gaiwan. After the rinse, lift the lid and breathe in. This first impression is the cleanest read on the tea you will get.
5. First infusion, eight to ten seconds. Pour steadily along the wall of the gaiwan rather than straight onto the leaf, then pour off completely. If any water stays behind, the next infusion will be harsh.
6. Add three to five seconds each round. Infusions two and three are usually the best: the leaf is open, the aroma is at full volume, and the bitterness has not started to build.
7. Keep the water hot. If you are brewing more than four infusions, reheat the kettle rather than let the temperature slide below 90 °C.
8. Finish the leaf. A good Dancong gives six to nine infusions. When the aroma is gone and only sweetness and water remain, stop.

Infusion Times at a Glance

Times below are for 7 g of leaf in a 120 ml gaiwan. Treat the first column as a starting point and adjust for your own leaf and taste.

If You Only Have a Mug

• Use 3 g of leaf in 300 ml — roughly a heaped teaspoon of twisted leaf, a little less if the pieces are long.
• Pour water at 100 °C and start tasting at one minute.
• Drink down to about one third, then refill. You will get three or four good rounds from the same leaf.
• Never leave the leaf sitting in a full mug for ten minutes. Lift it out if you are not going to drink it right away.

Three Mistakes That Flatten the Aroma

Water that is too cool. The single most common problem. Dancong is a roasted oolong with thick leaf; anything under 90 °C tastes thin and closed.

Steeping too long. A ten-second mistake at infusion two turns the rest of the session bitter. When in doubt, pour earlier.

Too much leaf. Overloading a small gaiwan feels generous and produces a cup you have to sip around. Weigh the tea once or twice and you will stop guessing.

How to Store It

Keep Dancong in a sealed, opaque container at room temperature, away from spices, coffee and anything else with a strong smell — oolong absorbs aromas readily. Lightly roasted Dancong is best inside a year to eighteen months. Heavier charcoal roasts settle for a few weeks after roasting and then hold their character for years.

A quick word on water, because it affects the cup as much as the leaf does. If your tap water is heavily chlorinated, fill a jug and leave it overnight, or use low-mineral bottled water. Very hard water mutes aroma; very soft water can make the tea taste hollow. The Tea Research Association publishes background on how growing and processing conditions shape what ends up in the cup.

Where to Start

If you are new to the style, begin with a single aroma type rather than a mixed set, so you can taste what the name actually refers to. Ya Shi Xiang is the most recognisable — bright, floral and easy to like. Mi Lan Xiang trades top note for honeyed sweetness and a rounder body. Zhi Lan Xiang is the more restrained, orchid-scented end of the family.

All three are grown on Phoenix Mountain in Chaozhou, Guangdong, and hand-picked in spring. You can browse the rest of the Phoenix Dancong range here, or see everything we ship worldwide.
